Public blockchain networks tend to have pretty high standards for security, while private networks might be a little more trusting. But either way, the rules that form the consensus mechanism are what gives blockchain technology its flexibility and power. Anyone, individually, can check the validity of each transaction and come to a conclusion on whether it’s good or not.

There are many Blockchain projects which aim to do this. I am wondering how this can be done. How can blockchain validate the origin of the fish? Or an ethical diamond? There is no reliable IDs on the fish or the diamonds.

The peer-to-peer network structure in cryptocurrencies is structured according to the consensus mechanism that they are utilizing. For cryptos like Bitcoin and Ethereum which uses a normal proof-of-work consensus mechanism (Ethereum will eventually move on to Proof of Stake), all the nodes have the same privilege. The idea is to create an egalitarian network. The nodes are not given any special privileges, however, their functions and degree of participation may differ. There is no centralized server/entity, nor is there any hierarchy. It is a flat topology.
Traditional online databases usually use a client-server network architecture. This means that users with access rights can change entries stored in the database, but the overall control remains with administrators. When it comes to a Blockchain database, each user is in charge of maintaining, calculating and updating every new entry. Every single node must work together to make sure that they are coming to the same conclusions.
Here’s a thought, the uses and advantages of blockchain technology can be used to create a real life country. Be a cyber revolutionary if you will. The events in Spain and Catalonia offers a very rare and perishable opportunity for the blockchain community to help the people of Catalonia to have a peaceful revolution. I am new to this but i can see that you could create a real life country function on blockchain technology. The advantages of blockchain tech can be used by the people of Catalonia to secede from Spain where it matters most: information, finance and governance. Blockchain proponents should descend on Catalonia and help them adopt their own blockchain based currency, dump the euro, and be the center of the blockchain universe. With this, significant impact can be had on the European economy enough for the whole of Europe and the world to take heed instead of just making political noise. The people of Catalonia should put their money where their mouth is. They should adopt a decentralized blockchain based currency and gain instant global recognition. Political recognition as an independent state can and is usually had through revolution, mostly the violent sort. But if the independent state of Catalonia will take control of its economy first by adopting blockchain currency, its economic standing in the world, albeit miniscule in terms of dollars and cents, will be cemented. This is especially when the whole world is looking at blockchain tech and its real-life applications. Political recognition will follow economic recognition. Look at Hongkong.
Though transaction fees are optional, miners can choose which transactions to process and prioritize those that pay higher fees.[69] Miners may choose transactions based on the fee paid relative to their storage size, not the absolute amount of money paid as a fee. These fees are generally measured in satoshis per byte (sat/b). The size of transactions is dependent on the number of inputs used to create the transaction, and the number of outputs.[3]:ch. 8
When the algorithm was created under the pseudonym Satoshi Nakamoto—which in Japanese is as common a name as Steve Smith—the individual(s) set a finite limit on the number of bitcoins that will ever exist: 21 million. Currently, more than 12 million are in circulation. That means that a little less than 9 million bitcoins are waiting to be discovered.

A transaction fee is like a tip or gratuity left for the miner.
Small wonder that Bitcoin emerged in 2008 just after Occupy Wall Street accused big banks of misusing borrowers’ money, duping clients, rigging the system, and charging boggling fees. Bitcoin pioneers wanted to put the seller in charge, eliminate the middleman, cancel interest fees, and make transactions transparent, to hack corruption and cut fees. They created a decentralized system, where you could control your funds and know what was going on.
The successful miner finding the new block is rewarded with newly created bitcoins and transaction fees.[87] As of 9 July 2016,[88] the reward amounted to 12.5 newly created bitcoins per block added to the blockchain. To claim the reward, a special transaction called a coinbase is included with the processed payments.[3]:ch. 8 All bitcoins in existence have been created in such coinbase transactions. The bitcoin protocol specifies that the reward for adding a block will be halved every 210,000 blocks (approximately every four years). Eventually, the reward will decrease to zero, and the limit of 21 million bitcoins[f] will be reached c. 2140; the record keeping will then be rewarded solely by transaction fees.[89]
Let's say you had one legit $20 and one really good photocopy of that same $20. If someone were to try to spend both the real bill and the fake one, someone who took the trouble of looking at both of the bills' serial numbers would see that they were the same number, and thus one of them had to be false. What a Bitcoin miner does is analogous to that--they check transactions to make sure that users have not illegitimately tried to spend the same Bitcoin twice. This isn't a perfect analogy--we'll explain in more detail below.

Every time a new transaction is initiated, a block is created with the transactions details and broadcast to all the nodes. Every block carries a timestamp, and a reference to the previous block in the chain, to help establish a sequence of events. Once the authenticity of the transaction is established, that block is linked to the previous block, which is linked to the previous block, creating a chain called blockchain. This chain of blocks is replicated across the entire network, and all cryptographically secured which makes it not only challenging, but almost impossible to hack. I say almost impossible because it would take some significant computational power to even attempt something like that. 
With the Bitcoin price so volatile everyone is curious. Bitcoin, the category creator of blockchain technology, is the World Wide Ledger yet extremely complicated and no one definition fully encapsulates it. By analogy it is like being able to send a gold coin via email. It is a consensus network that enables a new payment system and a completely digital money.
Lend directly to someone you know. This allows you to assess personally, whether you regard the borrower as trustworthy. Then the two of you only need to agree on the terms like duration and interest rate and off you go. The drawback is, however, that you probably will not have too many acquaintances who match your amount, duration and interest rate requirements. But it's a nice way to earn Bitcoins.

The “no rules” ethos of the protocol means that personal reputation will be even more important to business interactions than it currently is on eBay.
Smart Contracts: Smart contracts offer speed, efficiency, and security by building the terms of the agreement into blockchain transactions. Within the blockchain application, all terms and conditions of a contract for goods or services can be efficiently listed, amended, and agreed upon without the need for physical documents and signatures or for using potentially insecure methods of communication. Smart contracts can also eliminate complex and expensive services of a third-party intermediary for major transactions—such as real estate purchases or new auto loans.
Bitcoin mining operations take a lot of effort and power, and the sheer amount of competition makes it difficult for newcomers to enter the race and profit. A new miner would not only need to have the adequate computing power and the knowledge to use it to outcompete the competition but would also need the extensive amount of capital necessary to fund the operations.
